Easy Pumpkin Chocolate Chip Cookies or Bars

by Barbara on February 20, 2008

I wanted a dessert that was lower in calories and came across this recipe I had saved but never made. The recipe was given to me by a neighbor and it is a Weight Watchers recipe. My family and I loved it. It was very quick and easy to make and no one seemed to miss the fat.

Easy Pumpkin Chocolate Chip Cookies

1 box spice cake mix – dry
1 15 oz. can pumpkin
1 cup chocolate chips

Preheat oven to 350º. Spray cookie sheet with Pam (for cookies) or 9×13 pan (for bars). Mix ingredients together and drop balls on sheet or spread into pan. Bake 12-15 min. for cookies or 30 min. for bars. Makes 3 dozen cookies or 20 bars.

The cookies are 92 calories, the bars are 166 calories. It would have been a good choice if I hadn’t eaten so many. Oh well – maybe next time I’ll make the cookies.

My roommates make these all the time. And you can substitute whatever kind of cake mix you want. They are pretty darn good.
