We have been dieting at my house lately. Well actually my husband has been pretty good about dieting lately, but I haven’t been baking much. When my son asked me to make cookies I told him no. :-(
But the next day I saw this quick and easy recipe for Very Berry Crumble Bars on Megan’s Munchies and I thought it was a good compromise. Well, at least it had fruit and oats in it. The recipe does have a cup of oil in it, but I think next time I’ll try it with less oil. It makes a 9×13 pan of cookies, so I cut them up into bars and after we each had one, I froze the rest.
I really didn’t plan on eating any more, but some how every night around 8:00 I just couldn’t resist these delicious bars! I think they may be addicting! Although one bar did seem to satisfy my sweet tooth. Especially when I warmed it up in the microwave and topped it with a little Cool Whip. It was Light Cool Whip though, so really I was being good, right?
Thanks Megan for sharing the recipe!
Very Berry Crumble Bars
1 pkg. yellow cake mix
2 cups oats
1/2 cup brown sugar
1 cup canola oil
1 egg
3/4 cup strawberry ice cream topping
3/4 cup blueberries
Directions:
- Mix the cake mix, brown sugar and oats together.
- Add the oil and the egg and mix well.
- Pat half of the dough into a prepared 13 x 9-inch pan.
- Spoon the strawberry topping over the dough, and top with the blueberries.
- Crumble the rest of the dough over the topping and blueberries.
- Bake at 350 degrees for 30 to 35 minutes.
- Cool and cut into bars.

I love to bake, especially cookies, cakes, and pies.

I haven't been baking a lot either because we have been dieting also!
Oh, boy, does that look good!
I couldn't eat just one either.
I'm dieting here as well but try to bake and munch every now and again…My RD says that I should not cut things out of my diet but eat in moderation…unfortunately moderation is what I'm worried about…LOL These look scrumptious!!! Can I have one please?
Oh, Barbara, these look luscious and so berry good! I love them. I must try these as bars are great to bake and have on hand. I have no cake mix here available but I assume that I can replace it with a favorite yellow cake batter?
These do look good and very tempting…I wouldn't be able to diet with these yummy bars around!
Nice recipe with cake mix,i dont like cakes made with cake mix,i hav some berries and cake mix, will giv it a try…
And the oats make it healthy:) Yum!
They look so delicious, I know I wouldn't be able to resist. Blueberries are such a treat in any form.
I'm in the same boat – but every now and then I just have to treat myself! These look really scrumptious! It might be ok to substitute applesauce for some of the oil.
Looks so yummy!
Oh wow, I wouldn't be able to resist these either, they're beautiful!
I don't think I could eat just onee so you were better than I could have been These look fantastic!! Bookmarking!!!
Yum, this looks like a delicious and easy recipe. And we're supposed to eat fruit every day…right? I can't leave this kind of dessert alone. One little slice at a time I will eat most of it.
Simply irresistible barbara. I would have a few of this with my tea.

Dieting…what a yucky word, especially when browsing blog after blog of yummy recipes this this one!! Looks wonderful!
I thought you were going to say you topped them with a scoop of ice cream! :) Thats what I would do! They look terrific and I love it starts with a cake mix.
These look scrumptious and good on you and your family for going on a health spree! Using light cool whip is definitely a good step! It's like having Diet Coke or mineral water with fried chicken. I know people chuckle but it does help doesn't it :P
Oooh! These look good! I've been dieting too, but it make blogging so much harder!
What an incredible bar! I'm trying to lose some weight too.
The bars look fantastic!
Warmed it up and then added cool whip? How yummy. Nice recipe.
We're having a zillion people over for a bbq tomorrow so I've just jotted this down to try!
These just came out of the oven… I used a raspberry filling instead of the strawberry ice cream topping. Used 1/2 c. cinnamon applesauce and 1/2 c. oil. 1st taste was a good one!
This looks scrumptious!
Oh sure, it is the low fat cool whip that makes it OK for me to eat the entire tray of these goodies:) Kidding here as we are all dieting this summer and I have lost 9 pounds and thought I would have lost more but for some reason my metabolism must have died:)
