Daring Cooks Chicken Satay with Peanut Sauce and Awards

The January 2010 DC challenge was hosted by Cuppy of Cuppylicious and she chose a delicious Thai-inspired recipe for Pork Satay from the book 1000 Recipe Cookbook by Martha Day.

I substituted cubed chicken breasts and made the long marinade recipe. We didn’t love the marinade. I think it may be the turmeric in the marinade that we didn’t like. One day I’ll try it again with the faster marinade recipe because we loved the peanut sauce. Thanks Cuppy!

Jill at Jillicious Desserts, a very talented pastry chef and fellow Daring Baker, recently honored me with an award. Jill has an online bake shop and you really need to visit her site to see all of her amazingly beautiful creations.

I also was honored to received the Happy 101 award from Nicole at Prevention RD and Sarah at Maison Cupcake. Nicole’s a Registered Dietitian and her blog is filled with great recipes and tips on eating better. Sarah is a Twitter buddies who lives in the UK. Her blog is filled with wonderful recipes served up with a side of humor.

The rules of the award are:

BTW…the best Satay sauce recipe I've ever had is actually on my blog. Try it and see what you think. We go to Thai restaurants and hubby always says mine is better! And it's EASY!

I saw chicken cubes at the supermarket and was so tempted to use those, but I had chicken in my freezer that I felt I should make use of. I think the pieces of chicken would have been a bit easier to eat thought!

I like the chicken and snow peas combo. I didn't love the marinade, but when I added the fish sauce and turned up the heat a bit, it was better. I have used peanut sauce marinades on dishes like this and I think that adds some interesting flavors when combined with traditional Thai flavors.

Scuba diving is what stood out to me, too. ;) I've been watching a lot of underwater videos the last couple of months…

Your satay looks divine, and so do those peas. That's too bad you didn't care for it so much, but maybe you can find some better recipes to suit your tastes to make a better meal? :)

I love your peanut sauce Barbara, it's much lighter and looks so delicious, mine was much thicker though it tasted good.

Congrats on your awards. I love your blog cause you are honest. If you didn't like it , you didn't like it. But you pass on the comments all the same and some may like the turmeric whilst others maybe not so much. Grin. That is why we experiment and try. Our families, grin…what they go through with all our experimentation right?

That's funny. I didn't like the peanut sauce as much but the marinade was okay. Turmeric doesn't really have flavor, so maybe it was the coriander or cumin?

I've only made chicken satay once and really enjoyed the sauce but didn't use tumeric. I hope you try it again and check out other variations of the sauce and find one that suits your taste!
